Simple Prawn Spaghetti

Recipe Of The Week

What You Need

  1. 500g spaghetti 
  2. 2 Garlic cloves
  3. 1 tin chopped tomatoes 
  4. 2 tblspn tomato puree 
  5. Good shake of dried basil 
  6. 400g cooked prawns 
  7. Olive oil 
  8. Small glass of white wine 
  9. 1 lemon (zest & juice)
  10. 2 handfuls of rocket or Baby Spinach

What You Need (Optional)

  1. Dried or Fresh chopped chillies

How To Do It

  1. Put a pan of water on for the spaghetti.
  2. Finely chop or crush the garlic.
  3. Heat a little oil in a frying pan or large shallow pan.
  4. Add the Garlic and gently fry until it starts to turn colour.
  5. Add the prawns and cook for about a minute.
  6. Add the wine, tomatoes, tomato puree and basil. Stir well and simmer for a couple of minutes.
  7. When the spaghetti is cooked drain the water.
  8. Add the spaghetti to the tomato & prawn sauce and coat well.
  9. Squeeze in the lemon juice and add the rocket or spinach. Loosely stir through.
  10. Serve onto warmed plates or bowls and sprinkle the lemon zest over the top.
