Quorn Quesadillas

What You Need

  1. 150g Quorn Chicken style pieces
  2. Tortillas, White or wholemeal
  3. Tomato Salsa
  4. Small tin mixed beans
  5. Small tin sweet corn or large handful of frozen
  6. Olive oil
  7. Good shake of corriander
  8. Grated cheese

How To Do It

  1. Heat the oil in shallow pan or fying pan.  Add the Quorn pieces and cook until coloured.  Remove from the pan and keep warm.
  2. Heat the pan again (do not add any more oil) and place one tortilla in the base of the pan.
  3. Spread some salsa over the tortilla, add half the quorn, half the beans and sweet corn, a sprinkle of corriander and the cheese.
  4. Place another tortilla on top and cook for about 3-4 minutes.  Careful with a large slice, turn the tortilla over and cook the other side for 3-4 minutes.
  5. Remove from the pan and keep warm.
  6. Repeat steps 2-4 again.
  7. Cut each Quesadilla into quarters and serve with a crisp salad.
