Vegetarian Chilli Con Carne

Recipe Of The Week

What You Need

  1. 500g Soya Mince
  2. 1 large Onion chopped
  3. 1 Tin Chopped tomatoes
  4. 1 can Kidney beans
  5. Olive oil
  6. 1 sachet of chilli Con carne mix
  7. Approx 150ml water
  8. 1 large mug dried rice
  9. Creme Fraiche or Sour Cream

What You Need (Optional)

  1. 1 can baked beans (use instead of Kidney beans)

How To Do It

  1. Put the rice on to cook
  2. Chop the onion and gently fry in a little oil
  3. Add the Soya mince and stir in until soft (you may need to add a little water to keep moist)
  4. Add the Chilli mix (according to the packet instructions) and stir in
  5. Add the tomatoes and beans and stir in
  6. Bring to the boil then turn the heat down to a simmer.  Continue to cook for about 10mins, stiring occasionally.
  7. Serve with the rice
  8. Add a dollop of Creme Fraiche or Sour Cream
