Tomato & Three Cheese Pasta

Serves 4

Recipe Of The Week

What You Need

  1. 300g Pasta (Fusilli, Penne or Farfalle)
  2. 12 Baby tomatoes
  3. 2tsp Basil (dried or chopped fresh)
  4. 1 small tub Plain cream cheese
  5. Splash of milk
  6. 50g Grated Cheddar (strong)
  7. 50g grated Parmesan
  8. Salt & pepper to taste
  9. A little Olive oil

What You Need (Optional)

  1. Spinach (add some colour and added flavour)
  2. Black olives

How To Do It

  1. Cook the pasta according to the packet instructions
  2. Place the cream cheese in a pan with a splash of milk and gently heat until melted and smooth.
  3. Stir in the grated cheddar, salt & pepper
  4. Cut the tomatoes in half and gently fry in a little oil.
  5. When the pasta is cooked drain the water and place the pasta back in the pan.
  6. Stir in the cream cheese sauce and add the parmesan
  7. If using spinach, stir this in too.
  8. Serve Onto warmed plates and top with the fried tomatoes (you can have them raw if preferred) and olive if using.
