Courgette and Feta Frittata

Recipe Of The Week

What You Need

  1. 3 Courgettes
  2. 8 Eggs
  3. Splash of milk
  4. 3tsp parsley (Fresh or dried)
  5. 2tsp Chives (Fresh or dried)
  6. 150g feta cheese
  7. 2tsp olive oilSalt & Pepper to taste

How To Do It

  1. Top & tail the courgette and wipe the skin.  Then slice into fairly thin slices
  2. Heat the oil in a large frying pan and add the courgettes.  Try to lay the pieces out flat across the pan.  Cook until they start to turn colour.
  3. In a bowl or jug, combine the eggs, milk, herbs and the salt & pepper to taste.
  4. Pour over the courgettes and cook over a low heat until the mixture is set.
  5. Pre heat a grill.
  6. Crumble the fetta cheese over the top of the frittata and place the pan under the grill.  Cook until the fetta cheese is browned.
  7. Cut into slices and serve.
