Slow Roast Pork with Apple sauce

Recipe Of The Week

What You Need

  1. 2kg Pork (shoulder is better but any cut will do)
  2. Salt & Pepper
  3. Olive oil
  4. Salt & Pepper
  5. 2 Red Onions
  6. 4 medium Carrots
  7. 2 Garlic Gloves
  8. Sprig of thyme (optional)
  9. 2 Large apples
  10. Squeeze of lemon
  11. A little water

How To Do It

  1. Preheat the oven to gas mark 7 / 220º
  2. Place the pork in a roasting tin. Score the top with a sharp knife.  Rub in the oil, salt & pepper.
  3. Crush the Garlic gloves and rub over the top and then place in the tin along with the carrots, onions & thyme.
  4. Place in the oven uncovered for about half an hour.
  5. Turn the oven down to Gas mark 3/ 140°.  Cover the pork with tin foil and continue to roast for about 4 - 4½hrs.

For the apple Sauce

  1. Peel & slice the apples
  2. Place in a saucepan with a squeeze of lemon and a little water.
  3. Bring to the boil then turn down to a simmer and cook until soft.
  4. Mash the apples until soft.
  5. Place into a dish and set aside.
